This sparkling wine is made from 100% Chardonnay from an Oakbank Vineyard in the Adelaide Hills. Picked in Late February, it was whole bunched pressed into French oak barrels where it started ferment on its own. After wild yeast fermentation, it was left to sit on yeast lees before secondary fermentation in September. It is a Fresh and vibrant wine with beautiful balance that lingers on the palate.
