This Chardonnay was named after a favourite Family Matriach. It was picked from a single vineyard, Hillsmith Esatae in the Adelaide Hills out the back of Woodside. It was gently whole bunch pressed and fermented wild for 4 weeks in French oak barrels. It was left on its yeast lees in French oak for 8 months to develop texture and depth.
